Low Carb Real Rye Bread

 

1/2   Cup Rye Starter 14 g net carb (Likely less because the yeast eat some )

1 1/2   Tablespoons Yeast (Plus a few grains for the rye starter )

1 2/3 C. Warm Water

1 Teaspoon Honey

1 3/4 C. Antony’s Vital Wheat Gluten 28g net carb

1/2 C. Dark Flaxseed Meal 4g net carb

3/4   C. Lifesource Foods Oat Fiber 0g carbs

1 1/2 Teaspoons Salt

2 Eggs 1 g net carb

2 Tablespoons Butter

1/4   c Whole Psyllium Husks 2 g net carbs

1 1/2  Tablespoons Caraway Seeds 1 g net carb

1/4  Teaspoon Onion Powder (optional)

1/4  Teaspoon Garlic Powder (optional)

1/2  Teaspoon Dill Seeds

1/4  Teaspoon Black Pepper (optional)

1/4  Teaspoon Worcestershire Sauce (optional)

2 Tablespoons Bocha Sweet Granulated Sweetener (optional)

 

 

 

I use a bread machine on 2 lb loaf setting and the dough setting.

  1. 24 hours in advance mix a few grains of yeast with ¼ cup warm water and ¼ cup Pereg dark rye flour then cover with a coffee filter or something similar and set aside for the next day. (or you could make a real rye sourdough starter.)

  2. Mix warm water (110-120 f ) with honey then yeast and Worcestershire sauce and set aside

  3. Beat eggs in a container and set aside

  4. Melt butter and set aside

  5. Add all dry ingredients in machine or mixing bowl and mix first

  6. Add water / yeast mixture, then eggs and butter then your rye starter.

  7. Mix thoroughly and knead, roll out into loaf and put in warm place to rise. (I recommend warming the oven to about 150  F. and putting it in there with a small pan of boiling water underneath for 25 min or so.)

  8. Bake at 350 f for 40 minutes.(for one large loaf)

Low Carb Hot Dog Buns Recipe

2 C Warm Water (115 degrees or so)

1 tsp honey (To activate yeast.)

1 1/2 Tbsp. Yeast

1 3/4 C Vital Wheat Gluten

1/2 C Lupin Flour*

2/3 C Coconut Flour*

3/4 C Oat Fiber

2-4 Tbsp. Granular Sweetener (Erythritol, Bocha Sweet, Allulose or what you prefer.)

1 1/4 tsp. Salt

1 tsp. Xanthan Gum

3 Tbsp. Softened Butter

1 lg egg

 

Begin by heating water and honey to between 110-120- degrees F. and mix in yeast, then set aside.

I add all dry ingredients except yeast into bread machine (Or mixing bowl)  and mix a bit before adding wet ingredients.

I then add the yeast / water mix, then butter and eggs, while mixing.

Mix thoroughly but only knead a little as hot dog buns should be soft, and kneading toughens bread dough so the finished product can be sliced and used for sandwiches and such. (This is the biggest trick to getting them soft. In my bread machine I use the 2 lb dough setting and once mixing is done, I roll em.)

Roll better than I did in my video and place close enough they can grow together.

Place in warm oven with pan of hot water in the bottom for them to rise.

Once risen 2/3 the desired size, pull out and turn oven to 350 degrees and begin preheating.

Once oven is at 250 (That is not a typo), place buns in oven and bake for about 18 minutes. (Use your good judgement, but they stay soft when brown so browner than you might think to be done. See the video.)

Hamburger Buns Recipe:


2 C Warm Water (115 degrees or so)
1 tsp honey (To feed the yeast.)
1 1/2 Tbsp. Yeast
1 1/2 C Vital Wheat Gluten
1/3 C Lupin Flour
1/3 C Coconut Flour
1 C Oat Fiber
1/4 C Golden Flaxseed (ground)
3 Tbsp. Granular Sweetener (Erythritol, Bocha Sweet, Allulose or what you prefer.)
1 1/2 tsp. Salt
1/2 tsp. Xanthan Gum
3 Tbsp. Softened Butter
1 lg egg (Or 1 egg yolk + 2 Tablespoons more water. See video.)
